Oyster stuffing

1/2 cup butter
l lb mushrooms (oyster, shitake, mix it up)
1 cup sweet onion
1 cup celery, with leaves
1 quart oysters halved (save liquor)
2 packages Kings Hawaiian rolls
1 bunch parsley
2 tsp salt
1 tsp pepper
1 tbsp poultry seasoning
3 eggs, beaten
Saltine crackers

Rough chop veggies - you want big chunks

I strain oysters for 15 minutes before halving

Heat butter, add mushroom, onion, celery on medium heat 6-8 minutes, reduce to low

Tear rolls into 3-4 pieces each, mix in large bowl with dry ingredients, then add oysters

Add veggies and beaten eggs, toss lightly

Crumble saltines a few at a time into oyster liquor until you get a consistency close to oatmeal, add to mixture and toss lightly

Pour into baking dish (deeper = moister, shallower = better crust)

Bake at 350 for 45-50 minutes, then finish crust at 450 for 8-10 minutes
