Stuffed pork chops

I have a basic recipe stuffing thick cut pork chops with a basic cornbread stuffing with dried cranberries in it. My kids love it which makes me happy but not sure why they like it so much. I'm thinking they like the whole idea of the meat being stuffed and the stuffing does impart flavor and keeps the meat moist during grilling.


Any recipes or suggestions on stuffing pork chops? I tried one with goat cheese once and it wasn't too good as the cheese melted out of the meat during grilling.
