Bizarre Foods visits Helvetia

any of you guys evver cooked venison this way ?

Man, that looks like alot of work.but it looks.awsome. He said it almost had a pork flavor. It also looked like pork. I thought it would've looked alot darker as if it was smoked.
 
We use to cook fresh deer like that but with mild italion sausage inside. It takes 12 to 14 hours to cook this way but worth every minute.
 
My lunch on Saturday- Swiss Plate from the Hutte

Chicken breast, sausage link, some sort of meat patty (I'll be honest and admit I have no clue what it was), potatoes, green beans, sauerkraut (really mild), white and wheat bread, a small piece of pickled pineapple, and swiss cheese. Not pictured: peach cobbler for dessert.

I would guess your mysterious meat pattie is frikadellen. Looks like frikadellen to me...
