This one tasted way better than it looks in this pic. I made up my own recipe for this (should be pretty close on the amounts).
Recipe:
1 whole chicken
3 stalks celery
1 medium onion
Carrots
7 cups chicken stock
2/3 cup of rice
1/2 can of black beans
2 cups half and half
Cut chicken into pieces and brown in the soup pot on each side. Add in the stock and vegetables, then simmer for a half hour. Remove the chicken pieces, shred them, and add them back to the pot with the rice and beans. Simmer for another half hour. Turn the heat to low, add the half and half, and cook until it's warmed through.
My mom made this all the time growing up, but this was the first time making the recipe myself.
Recipe:
1/4 cup chopped onion
1/4 cup green pepper
2 tablespoons butter
1 tablespoon flour
Pepper
1 cup milk
4 ounces shredded cheese
1/4 cup mayonnaise
3 medium potatoes, cooked
1 pound cooked diced ham
Cook onions and pepper in butter in a stove pot until tender. Stir in flour and pepper. Add milk and bring to a boil, stirring constantly. Reduce heat, add cheese and mayo. Stir until melted. Combine cooked potatoes, ham, and sauce in baking dish. Bake in oven at 350 for 30 minutes.
