BCM, I had the kale...

Braised Kale and Sweet Onion

2lbs cleaned kale (middle stem out)
1 medium spanish onion-julienne
1/2 stick whole butter
Kosher salt to taste
Black pepper to taste

1) Blanch kale in salted boiling water for 8 minutes or until tender
2)Shock kale in ice water until kale is cooled thoroughly. Remove ice from ice bath and dry.
3) In a large skillet saute onion in vegetable oil until golden brown.
4)Add kale to skillet and heat (using a wooden spoon) until kale is hot.
5)Add butter, salt and pepper.
6) Serve immediately.
