West Virginians are typically classified as being of Scot-Irish descent, as I am. Even so, I've never tried colcannon, never knew anyone who ever mentioned it, but I had hoped that someone on this forum would post a recipe for their version of it. After all, it is St. Patricks day !

one lb.of cabbage shredded, one lb.of potatoes cubed/cooked/mashed,6 green onions finely minced,1/2 pint of cream,4 oz.butter,salt/pepper. place the cabbage with salted water in pot boil until tender.in another pot boil the potatoes until tender drain.add the onions and milk to this.add the cabbage and half the butter beat well. serve with the remaining butter on top of the colcannon.......ps. i grew up with the O'kellys,O'donavans,Mcflathey, and the Mccauleys',,,there were the salt of the earth,i tell you laddie.
