Sorta OT but great article on being a line cook....

You ever read Kitchen Confidential by Anthony Bourdain?

One of the highlights of my day was eating brunch at a restaurant in Pittsburgh and being seated right in front of the line.
 
Yeah pretty much spot on....Feed the bitch....Friend of mine worked at les Halles one winter. Said he was the only American working in the restaurant.

Excuse my ignorance but what do you mean "only American"? Just curious if you meant immigrant help or french chefs?
