Hot Dog Chili
(1 gallon)

lb Ground Chuck
½ ea. Lg.
White Onion puree'd

oz. Hunts Chili Sauce
10
oz Beef Broth

ea. Fresh Garlic Clove
puree'd
½ C Light
Chili Powder
¼ C Paprika
½ Tbsp Ground
Black Pepper
¼ tsp Cayenne
Pepper

Tbsp Iodized Salt
¼ tsp Dried
Thyme
¼ Tbsp Dried
Oregano

tbsp Whole Grain Mustard
1. Place meat in a large stock
pot and add just enough water to cover meat.
2. Using a stiff whisk
pulverize meat over low heat.
3. Continue until meat is
thoroughly cooked and of fine texture and all water has disipated.
4. Using a ladle remove 90 % of
the fat from the top and discard.
5. Add the onion, garlic, and
dried spices. Mix thoroughly into meat.
6. Add chili sauce, beef stock
and whole grain mustard and allow to simmer for approximately 30 minutes.
7. Remove from heat, quick
chill and hold until service.
