Thinking about smoking some beef ribs this weekend. Just salt and pepper as a rub or is there something better to use on beef ribs ? I have hickory chunks to use for smoking but would any of you recommend something different for smoke ?

Hickory should be fine. You could add garlic powder, onion powder, paprika, cayenne, brown sugar, fennel, and/or coriander to your taste for the rub. Plain S&P won't turn out bad, though. Beef ribs have taken quite a bit longer than pork ribs when I've done them.

Wasn't sure how a basic BBQ rub would work on beef ribs. I guess not a lot different from doing a brisket I quess

Doesn't have to be too different from brisket, just to your taste. I tend toward more spicy and less sweet for beef in general
 
I highly recommend McCormick's Western Seasoning. I have used it for many years. It works well on all meats. It is very close to Montreal Steak Seasoning except for some spice adjustments and has a finer grind. I just ordered a couple more containers on Amazon. You will not find it in retail stores, some food service companies may carry it. Many years ago myself and a couple other guys worked with McCormicks in developing this blend. We developed six custom spice blends and after our program died, McCormick only kept the Western Seasoning as something they would market.
