BCM or anyone, i would like a good potatoe soup recipe

I like a good thick potatoe soup

I don't have a recipe I follow Steve but it really is simple.

Peel and slice 5 idaho potatoes
Rough chop 1 white onion
Rough chop 2 stalks of celery

Saute celery and onion until soft
Add potatoes
Cover everything with chicken broth (until there are approx five inches of broth on top of everything)
Boil covered for 30-45 minutes until all potatoes are soft
Puree until smooth with a handheld mixer or in a blender
Adjust consistency with more chicken broth if soup is too thick.
Medium dice 1 more potato and add to soup. Continue cooking until potato garnish is soft.

Finish with a half cup of warm heavy cream and salt and white pepper. I always also finish with a couple of dashes of Lea and Perrins and Tabasco.

Really is that simple Steve...

Depends on the consistency you prefer, but.....
I make mine very similar, but I do not puree and I mix a cup of flour with an egg with a fork. This creates small dough balls that I drop into the pot; a few at a time so they don't clump together. It creates a thicker soup and the "dumplings" are quite tasty. I put a little carrot in mine as well.
 
I believe Mog posted one on here a couple years ago that was really good...

anyone have it saved?
