Anyone got a good white chili recipe to try?

Looked at some on the web and none look all that great. My buddy is doing jambalaya for the game on Saturday, but was looking for something to throw in the crockpot for Sunday.
 
Try this, a favorite of ours. If you like a little more spicy, substitute medium or hot green chiles.

White Bean Chili




Olive Oil 1 tablespoon


Onion chopped


Chicken (2-3 large
breast ? cooked in boiling water and chopped)


Cannellini
Beans 16-19 ounces


Garbanzo
Beans 16-19 ounces


Shoe Peg Corn 12 ounces


Garlic 1 clove
minced


Green Chiles
(mild) 4 ounces


Chicken
Bouillon Cubes 3


Cumin 1
ground teaspoon




Pre-heat oven
to 350 degrees. Saute' onion, garlic,
and cumin in olive oil. Combine sauteed
onions with chicken, beans, corn, and chilies.
Dissolve bouillon cubes in 2.5 cups of water and add. Bake in 2.5 quart covered casserole 50-60
minutes. Utilize
juice from cans

Mmmmmm, jambalaya! I always make it for one game a year and this year it will be for the Oklahoma game. I love that stuff!
